Chicken Binagoongan


Ingredients:

  • 1 lb. chicken breast
  • 2 tbsp. garlic, minced
  • 1 medium onion, sliced
  • 2 medium tomatoes, sliced
  • 1/2 cup shrimp paste
  • 1/2 cup water
  • 2 bay leaves
  • 1/4 cup vinegar
  • 1/2 tsp crush pepper
  • 1/2 tbsp. sugar
  • cooking oil



Cooking Procedure:

  1. Sear the chicken in the cooking pot until slightly brown. Set aside.
  2. Heat another cooking pot and pour in the cooking oil.
  3. Saute the garlic, onion and tomatoes.
  4. Add the seared chicken and stir to blend. 
  5. Add the shrimp paste. Stir and cook for 5 minutes.
  6. Add the remaining ingredients and cook for 15 minutes more or until the liquid is reduced.
  7. Serve and enjoy!

Adobong Atay



Ingredients:

  • 2 tbsp cooking oil
  • 3 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 pieces bay leaves
  • ½ kilo chicken liver
  • 1 tsp whole peppercorn
  • ½ cup soy sauce
  • ¼ cup vinegar


Cooking Procedure:

  1. Heat cooking pot, add the cooking oil and sauté the garlic and onion.
  2. Add the atay ng manok and stir fry for 2 minutes.
  3. Put the bay leaves, peppercorns, soy sauce and vinegar. Cover the cooking pot. Let it boil.  Do not stir. Simmer for 5 minutes until vinegar is cooked.
  4. Stir and then let it simmer for 3 minutes or until the chicken liver is cooked.
  5. Serve and enjoy!


Ginisang Munggo with Dilis



Ingredients:
  • 1 lb mung beans (munggo)
  • 1 piece beef cube (for flavoring)
  • 1 tbsp. garlic,minced
  • 1 medium onion,chopped
  • 1 medium tomato,chopped
  • 1/4 kilo chicken (cut into small pieces)
  • 1 tbsp fish sauce
  • 1/4 kilo fried dilis
  • 1 cup spinach
  • water
  • pepper


Cooking Procedure:

  1. In a cooking pot, put-in the water and bring to a boil.
  2.  Put-in the beef cube and Mung bean and simmer until the Mung Bean is soft enough (about 35 to 50 minutes)
  3. On a separate cooking pot, sauté the garlic, onion and tomato.
  4. Add the chicken and simmer for 5 minutes.
  5. Put-in the fish sauce and simmer for 3 minutes.
  6. Pour the cooked Mung beans and simmer for 10 minutes.
  7. Add the spinach, fried dilis and pepper and simmer for 5 minutes. Note: No need to add salt because fried dilis is already salty.
  8. Serve and enjoy!


Biko



Ingredients:
  • 2 cups glutinous rice
  • 1 1/2 cups water
  • 2 cups brown sugar
  • 4 cups coconut milk
  • 1/2 tsp. salt


Cooking Procedure:
  1. Combine the sticky rice and water in a rice cooker and cook until the rice is ready.
  2. While the rice is cooking, combine the coconut milk with brown sugar and salt in a separate pot and cook in low heat until the texture becomes thick. Stir constantly.
  3. Once the rice is cooked and the coconut milk-sugar mixture is thick enough, add the cooked rice in the coconut milk and sugar mixture then mix well. Continue cooking until all the liquid evaporates (but do not overcook).
  4. Serve and enjoy!

Ham Fetuccine


Ingredients:
  •  1 lb. fettuccine, cooked according to package instructions
  • 1 tbsp. butter
  • 1 tbsp minced garlic
  • 1 medium chopped onion
  • 4 pcs. ham
  • 1 can cream of mushroom
  • 1 pack of all purpose cream
  • 1 can of button mushroom
  • 1/4 cup cheddar cheese, shredded
  • salt & pepper to taste


Cooking Procedure:
  1. Cook the fettuccine according to package instructions
  2. Heat a saucepan or cooking pot and saute garlic and onion in butter
  3. Add the ham and stir fry for 3 minutes.
  4. Add the button mushroom and let it cook for 2 minutes.
  5. Add the cream of mushroom and all purpose cream. Mix well.
  6. Add the cheddar cheese. Stir continuously until cheese melts and the texture of the mixture becomes fine.
  7. Season with salt and pepper
  8. Add the cooked fettuccine and toss until the noodles are well covered with sauce.
  9. Serve and enjoy!
