Sauteed Eggplant
Ingredients:
- 3 eggplant, sliced lengthwise and cut in 1-inch pieces
- 2 beaten eggs
- 4 cloves of minced garlic
- 1 sliced onion
- 1 spring onions (separate the white and green part)
- 1 chopped tomato
- 1 bell pepper, julienne
- 3 tbsp soy sauce
- salt and pepper (optional)
- 1 tbsp cooking oil
- Heat a cooking pot and put in the oil.
- Saute garlic and onion.
- Add the white part of the spring onion and bell pepper.Stir-fry for 3 minutes.
- Add the eggplant and the green part of the spring onion. Stir and cover for 5 minutes.
- Add soy sauce and pepper. Stir. Cover and cook for another minute.
- Add the eggs and mix it with the other ingredients.
- Serve and enjoy!
