Sauteed Eggplant

Sauteed Eggplant

Ingredients:
  • 3 eggplant, sliced lengthwise and cut in 1-inch pieces 
  • 2 beaten eggs 
  • 4 cloves of minced garlic
  • 1 sliced onion
  • 1 spring onions (separate the white and green part)
  • 1 chopped tomato
  • 1 bell pepper, julienne 
  • 3 tbsp soy sauce
  • salt and pepper (optional)
  • 1 tbsp cooking oil
Cooking Procedure:
  1.  Heat a cooking pot and put in the oil.
  2. Saute garlic and onion. 
  3. Add the white part of the spring onion and bell pepper.Stir-fry for 3 minutes.
  4. Add the eggplant and the green part of the spring onion. Stir and cover for 5 minutes.
  5. Add soy sauce and pepper. Stir. Cover and cook for another minute. 
  6. Add the eggs and mix it with the other ingredients. 
  7. Serve and enjoy!
